**Dairy Free Chocolate Muffins

Ingredients:

1 cup of water

1 teaspoon vanilla

1 tablespoon vinegar

1/3 cup vegetable oil

1 cup of sugar

1 teaspoon of baking soda

1/3 cup coconut

1 and 1/2 cups flour

3 tablespoons cocoa or carob powder

Method:

1. Preheat the oven to 190C.

2. Mix first 6 ingredients in bowl until blended.

3. Sieve the remaining ingredients and mix in a bowl until just combined.

4. Bake for 15-20 minutes.

Servings: 6 large muffins or 12 smaller muffins

If you’re not a vegetarian but are considering becoming one, don’t let fear of eating eggs or dairy stop you.
