Tired of eating the same camp food over and over again? Try cooking fish over your campfire – it’s easier to cook but just as satisfying (even more so when fresh). Most of all, it gives you a break from your usual meat and eggs breakfast menu. Fish is also much healthier! So next time you go camping or fishing, be sure to try any of these campfire fish recipes:

Camp Style Fish Tacos

What do you need:

For the fish:

  • 6 tortillas

  • 2 snapper nets

  • 1/2 lime

  • 1 tablespoon olive oil

  • 1 teaspoon chili powder

  • 1/2 teaspoon salt

  • 1/2 teaspoon cumin

  • Hot sauce, for serving (optional)

  • French fries, to serve (optional)

For the corn sauce:

  • 2 ears of corn on the cob

  • 1/2 lime

  • 1/2 red onion, chopped

  • 1 jalapeno

  • a handful of fresh cilantro, chopped

  • Salt to taste

Fire up your grill or campfire. When over medium heat, place the corn and jalapeno on a grill and cook until just tender, about 10 minutes.

Arrange the fish pieces on a plate. Squeeze 1/2 lime and drizzle 1 tablespoon of olive oil over the fillets, then coat all sides with chili powder, salt, and cumin. Place prepared fillets in a wire grill basket and cook for 3 minutes per side or until cooked through. Remove from heat and set aside.

To prepare the sauce, remove the corn from the cob and place in a bowl. Chop the jalapeƱo (remove the blackened parts) and add to the bowl. Mix the onion, cilantro, juice of 1/2 lemon, and salt.

Arrange the tacos by placing the fish and salsa inside the tortillas. Serve with French fries and season with hot sauce if desired.

Campfire Lemon Pepper Salmon

What do you need:

  • 1 kilogram. salmon fillet

  • 2 lemons, sliced

  • 3 tablespoons of butter

  • Kosher salt, to taste

  • Black pepper, to taste

  • Parsley, to decorate

Use cold water to rinse the salmon fillet, then pat dry with paper towels. Line a heavy-duty aluminum foil baking sheet with lemon wedges. Place the butter in the center of the pan followed by the salmon, placing it skin side down on top of the lemons.

Sprinkle the steak with kosher salt and black pepper, then cover the pan with aluminum foil. Place the pan over a campfire or preheated grill. Cook for 18-20 minutes over medium high heat until cooked through and fish flakes easily.

When done, remove foil cover, garnish with parsley, and serve.
