Red Lobster Linguini with Cajun Shrimp

Ingredients:

1 pound linguine, 1/2 cup chopped flat-leaf parsley, salt, ground black pepper, 2 tablespoons olive oil, 2 tablespoons butter, 1 minced white onion, 4 finely chopped garlic cloves, 1 pound – approximately 25 – shrimp (shelled and deveined, glue removed), 1/2 teaspoon crushed dried thyme, 1/4 teaspoon red pepper flakes, 1/8 teaspoon cayenne pepper, 1/2 cup heavy cream, 2 tablespoons tomato paste, sugar, lemon juice

    Recipe for 4 people. Make the necessary adjustments for larger quantities.

  1. Place the shrimp in a small mixing bowl. Sprinkle shrimp with cayenne, salt, pepper, and thyme. Mix and let it rest.
  2. Boil the pasta in a large pot of salted water until al dente. Drain the pasta, reserving some of the pasta water.
  3. While the pasta is boiling, melt the butter in a separate skillet with olive oil over medium to medium high heat.
  4. Sauté onion until soft, 3 to 4 minutes.
  5. Add the minced garlic and red pepper flakes. Stir for 30 seconds and don’t let the garlic burn.
  6. Add the tomato paste, heavy cream, and a pinch of sugar. Stir the ingredients and continue cooking until just combined.
  7. Add the shrimp and cook 2 minutes.
  8. Add the pasta and mix, you can add the water reserved for the pasta to moisten if necessary.
  9. Allow shrimp to finish cooking, 1 to 2 more minutes. Don’t overcook. Add the parsley. Season to taste with additional salt and pepper, if desired. Remove from heat, squeeze lemon juice over pasta and serve.
